Mechanism of action

Convertzyme 260D enzymatically cleaves α-1,4 glycosidic bonds in starch molecules, resulting in reduced molecular weight and viscosity. The enzyme is thermally inactivated upon reaching the target viscosity, ensuring stable and consistent viscosity thereafter.
